Shrimp and Crab Ceviche
2 cans (4 oz) Bumble Bee® Medium Shrimp, drained
1 can (6 oz) Bumble Bee® White or Lump Crabmeat, drained
1 cup chopped celery
1 cup chopped onion
1 cup chopped tomato
1/4 cup chopped fresh cilantro
1 jalapeno pepper, stemmed, seeded and diced
1/4 cup lime juice
1/4 cup lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
In medium bowl, combine shrimp, crab, celery, onion, tomato, cilantro, pepper, juices, oil and salt. Stir gently, cover bowl and refrigerate until served. Refrigerate to marinate ingredients (30 minutes or up to 8 hours if desired). Makes 6 cups. Serving suggestions: Serve with tortilla chips or crackers.
